Nancy's Gingerbread Recipe

Nancy Defina is a long time employee and Commercial Account Manager for our agency.  She also happens to be a very talented gingerbread house maker and is sharing her recipe with us! 

 

            Gingerbread

  • ½ cup butter
  • ½ cup brown sugar
  • ½ molasses
  • 3 ½ cups of all-purpose flour
  • 1 teaspoon of baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon salt
  • ¼ teaspoon of cloves
  • 1/3 cup water

 

Mix the butter, brown sugar molasses together in mixer.  Add all dry ingredients in a separate bowl and mix well.  Gradually add the dry mixture to the butter, sugar, molasses mixture alternating with the water.  Mix well.  Shape dough into two round pieces.  Place dough into a gallon storage bags and flatten to about half of an inch thickness.  Chill dough in refrigerator for about 1 hour.  Remove dough onto a floured foil or parchment paper and roll to about ¼ inch thickness.  Cut dough into shapes to make your house, gingerbread men or cookies. Remove the excess dough and move your foil/parchment paper to your baking sheet with the cookie pieces. Bake at 350 for about 15 minutes or until the dough springs back when lightly pressed with your finger.

 

            Icing

  • 2 lb bag confectioners’ sugar
  • 12 tablespoons water
  • 6 tablespoons of meringue powder
  • ¼ teaspoon of vanilla flavoring

 

Mix until all ingredients are blended.

You can purchase the cookie cutters at Walmart or Michael’s.
